Cooking with Bison Meat
Find a Meal that Fuels Your Wild Life
What do you call a buffalo in December? ...yeah, sorry...
A perfectly well-adapted animal! (or bison chili)

Cook Low and Slow (really and truly)
Bison meat is an easy substitute for any beef recipe. It's tender, juicy, and flavorful. However, bison meat is a lean meat. Care should be taken to keep moisture in. Cook meat at a lower temperature to avoid dry, tough meat. Slow cook using crock pots, marinades, and Sous vide methods for juicy, tender roasts and steaks. A meat thermometer is your friend.
According to USDA, bison should follows the same guidelines as beef and steaks cooked to medium rare at 145 °F.
