Where's My Compass Jerky

Ingredients

  • 2 lb bison round steak

  • ¼ cup soy sauce

  • 2 tbsp Worcestershire sauce

  • 1 tbsp honey 

  • 1 tsp peppercorn

  • 1 tsp garlic 

Best Served: 
When you decide to throw out your compass and just go 

​Prep the Meat

  1. Freeze bison round for 30–45 minutes (makes slicing easier).

  2. Slice ¼ inch thick strips

    • With the grain = chewier jerky

    • Against the grain = more tender jerky

 

Marinate

  1. Add ingredients in bowl.

  2. Toss and thoroughly coat meat strips.

  3. Cover and refrigerate for 12 hours

 

Dry the Jerky

Oven Method

  1. Preheat oven to 170°F or the lowest setting.

  2. Lay beef strips in a single layer on a lined baking sheet.

  3. Bake 3–5 hours, flipping once halfway.​

Dehydrator Method

  • Set to 165°F 

  • Dry 4–6 hours.

 

Jerky should bend and crack but not snap
