Where's My Compass Jerky
Ingredients

2 lb bison round steak
-
¼ cup soy sauce
-
2 tbsp Worcestershire sauce
-
1 tbsp honey
-
1 tsp peppercorn
-
1 tsp garlic
Best Served:
When you decide to throw out your compass and just go
​Prep the Meat
-
Freeze bison round for 30–45 minutes (makes slicing easier).

Slice ¼ inch thick strips
-
With the grain = chewier jerky
-
Against the grain = more tender jerky

Marinate
-
Add ingredients in bowl.

Toss and thoroughly coat meat strips.
-
Cover and refrigerate for 12 hours
Dry the Jerky
Oven Method
-
Preheat oven to 170°F or the lowest setting.
-
Lay beef strips in a single layer on a lined baking sheet.
-
Bake 3–5 hours, flipping once halfway.​
Dehydrator Method
-
Set to 165°F
-
Dry 4–6 hours.
Jerky should bend and crack but not snap
