Bison Quinoa Stir Fry

Ingredients 
1 lb bison liver, top sirloin, flat iron, or flank, cut into strips
1 tsp salt
1 tsp pepper
2 Tbl avocado oil
1 c cassava flour
2 c broccoli florets
2 cloves garlic, chopped
1 bell pepper, thinly sliced
2 green onions
2 carrots, cut into strips
1 Tbl sesame seeds


Sauce:
1/4 c soy sauce or coconut aminos
1/4 c water
1 TBL honey
2 tsp sesame oil
2 tsp ginger

Best Served:
As an evening picnic

Instructions

  1. Coat liver (or other cut) in flour, salt, and pepper.

  2. Add avocado oil to a 12 inch skillet on medium high heat, sear meat for 1-2 minutes.

  3. Remove meat from skillet and set aside.

  4. Add vegetables to the skillet and sauté for 3-4 minutes, until beginning to soften.

  5. Add sauce and meat and cook until meat is done. Add to rice or quinoa.
